I haven't made many buildings with interiors, but I found that kitbashing the walls into 1" high, in a standee upside down "T" format, and matching the floor texture on the wall base texture, worked really well. I felt it was better than just drawing walls on the interior floor, and made it much easier to move minis around. I know CCotD and Kane have seen what I'm talking about... a while ago.
