I've got a bottle of Zip Dry made by Beacon. If it's the same stuff, I highly recommend it (but watch the fumes as Denny said). It bonds pretty fast (you can still reposition things slightly though) and pretty strong. Nonetheless, I still use a glue stick for large sandwich folds.

Don't know if anyone has tried this but I found a pretty good cheap glue for doing small tricky things and repairs, and no fumes.
Aleene's Quick Dry Tacky Glue in the grey and purple bottle. Don't glop it on, just use a thin smear, it holds very, very fast fast and I have not had any warping. I've even used it to glue cardstock edge to edge.
The normal Aleene's works ok, but the quick dry is by far the best.
Easy to get this stuff even at WalMart.

Tombow Mono Aqua is some good glue. The dispenser has a pen tip and a broad tip and is refillable.

I've been using UHU "Twist and Glue" since I moved to Spain. It works well, sets and drys quickly and I can buy it at Carrefour (a Wal-Mart type store).

Been using Zip Dry, which the Jo-anns a block away from me carries. So far it is pretty good, though I've had a couple issues (other than the fumes).

First is that its a pain to put down - the bottle seems to re-seal itself so it requires quite a squeeze to get out (though I used a knife to poke a hole in the tip rather than cutting off the tip). If it is a large area and I put it on too thin it dries quick, so its difficult to cover a large area.

Second is that sometimes it doesn't seem to set too well and ends up gummy like rubber cement instead.

I figure these are both user error. That said, I prefer it over my 4 other options (Staples glue tape runners - my 2nd fave, Uhu pen - warps, Uhu purple glue stick - hard to spread and dries very quickly, and staples purple glue sticks)

Long post, but the experience was so night and day I had to share.

I stumbled across WWG a few days ago and decided to give Castle Works a try. Sounded fun and my 4 year old daughter wanted "A castle where my princess lives!" Gluing the tabs was driving me nuts due to having to hold each tab in place for the glue to dry. After just a few of these I saw my wife's scrapbooking supplies sitting there and grabbed one of her "Tape Runners". It was a whole new world that turned a tedious process in to quick precise joy. I spent some time researching these over the last two days. See the link below for one example, but don't let the names fool you. These devices DO NOT use glue or tape like you think of it.

What these devices do is to basically apply an industrial adhesive similar to what is used in professional framing shops. The adhesive is similar to what is used on a high quality double sided tape, BUT there is no tape. Just a few mils thick archival quality adhesive with essentially no moisture content and acid free.

Down side is the cost. Figuring a CastleWorks simple tower inc base and topper is ~7yds (bit of over kill) of 0.25 inch tape is ~$1.90 per tower vs a guess of ~$0,25 for quality glue. Expensive compared to glue, but my time and frustration are worth a few dollars a week. If you're doing alot of modeling see below for how to cut that to ~0.90 per tower.

My first model with glue was not bad, but had minor warping in the long joints and some misalignment where parts shifted during the gluing. and was a slow process. Second model was about perfect (ZERO warping even on the long thin crenelations for the topper, and alignment was much better because nothing moved once I pressed the surfaces together) and the assembly took about 1/4th the time. (BTW, total cost for the simple tower and topper is $3.75 for all materials with this adhesive system. This is with off-the-shelf retail for ink, foam core, and paper.)

I have no fear for the long term reliability of the adhesive - scrapbookers are rabid in their demands for quality products. Some of these people are true chem geeks and have gone to the lengths to set up national governing bodies (such as Creating Keepsakes) that are the UL of the craft world.

If you are really serious about it here is the professional version from 3M: The Scotch ATG 714 system. Break even point vs. the craft style disposable dispensers to cover the initial cost of the dispenser is about 40 simple towers.

According to the serious scrappers ATG 908 Gold in 0.25 inch is the stuff you want. Acid free, archival quality, etc.

There are both permanent and repositionable, but I'd only use the permanent on models as the repositionable is more like a Post-It note. Once you apply pressure then it's an instant bond. I've found that I can touch down a very small area (like the hinged edge of a tab) and then lift it again if it needs to be repositioned. Once I touch down any significant area of a tab then it is permanent. Apparently some of the brands have a short re-work period, but I haven't looked into it much as I want the instant bond.

Im going to throw my vote in for the Elmers no wrinkle double ended glue pen

While ive only been paper modeling for a short while ive always been crafty and knew i needed a low water glue for the cardstock. Having not been able to locate the UHU products everyone raves about I grabbed this off the shelf simply because of the dual tips. However once I started using it I wont use anything else. The glue is nice and tacky and spreads easy. The orange color is nice to see how much glue your applying and it dries relatively quickly but allows for some wiggle room to get things lined up properly. While it IS possible to squeeze out TOO much glue im certain that can be the case for any liquid product. If you watch your glue flow you cant go wrong with this one. Thats my .02 anyway.

As 10$ less MSRP sounds like a winner. 3M's Spra-Ment is the first spray glue I've gotten good performance out of, but I was lucky and got it on sale cheeeep. That won't happen again, so I think I'll either switch to Loctite or ...something.

The Elmer's can be tetchy in drying if it's overapplied even a little. I use a scraper made from scrap cardstock or chipboard to spread the glue and thin the application. Of course, I also use magnets to keep ahold of the join once it's in the right place so I can walk away and do other things while I'm at work.

I've been shifting to using the Loctite Gel superglues for my props and other non-flat items lately, too.
