Sounds good. For the building itself, Castles&Keeps has 7" walls with stained glass windows, as well as "cathedral style" benches. Sounds perfect fo what you're looking for. It also has a throne room with a 3x5" raised dais and red carpet that might be perfect to put under the alter.

VillageWorks also has various roofs (missing in Castles&Keeps), some more walls, and a steeple tower. I don't know how well the VillageWorks and C&K scales fit together (I don't own VW), but I bet you could put something from just those two sets fairly easily. I would strongly recommend CastleWork Ultimate as well, but keep in mind that the walls look quite different from C&K. It does have some very nice large doors, arches etc.

Keep in mind that at 7x7", you're really dealing with a largish chapel, not really a church - and by no means a "cathedral"...
